Resep Spice Lamb Rice

Bahan:

  • Lamb leg meat cut into cubed 300 gr
  • Pandan wangi Cianjur Rice, Cianjur Regency, Jawa Barat 500 gr

Paste A

  • Shallot 60 gr
  • Garlic 30 gr
  • Red Chili 25 gr
  • Candle nut toasted 10 gr
  • Coriander seed pounded 1 sdm
  • Ginger 10 gr
  • Tumeric 6 gr
  • Coconut oil 100 ml

Blend to powder

  • Carawat seed (jinten) 0,5 sdm
  • Kas Kas 0,5 sdm
  • Tumeric powder 2 gr
  • Star anise 2 pcs
  • Moloku kie raha clove, maluku 3 pcs
  • Siau Nutmeg, sulawesi utara 2 pcs
  • Koerintji Cinnamon, jambi 3 cm
  • East luwu pepper white. sulawesi selatan, powdered 1 gr
  • Amed salt, Amed, Karangasem, Bali 5 gr
  • Muntok white pepper, Bangka Belitung 3 gr
  • Cardamon (kapulaga) 10 pcs
  • Kari leaves 13 leaves
  • Pandan leaves 3 leaves
  • Salam leaves 3 leaves
  • Lemon grass pounded 1 pcs
  • Coconut water 500 ml
  • Coconut milk fresh 200 ml
  • Pineapple chunk 150 gr
  • Toasted grated coconut 3 sdm

Method:

  1. Blended all the paste A
  2. Mixed with diced lamb led
